These delicious, crispy roasted turnips with a rich butter sauce are going to be your new favorite side dish.

Ingredients

  • 4 cups evenly chopped turnips
  • 1-1/2 Tablespoons oil- avocado, olive, or canola
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 Tablespoon melted butter
  • 1 Tablespoon fresh chives, minced

Instructions

  1. Preheat the oven to 425 degrees
  2. Toss chopped turnips in oil, salt, and pepper in a medium bowl
  3. Spread coated turnips out on a large rimmed baking sheet
  4. Roast for 25-30 minutes, turning over halfway to ensure an even roast
  5. Mix melted butter and chives together in a small bowl
  6. Transfer roasted turnips to serving plate and drizzle with chive butter, and sprinkle with additional salt, as needed
